Technically yes, practically no. Canvas's servers log IPs like every website does — but that data isn't a quiz-cheating signal and your instructor almost certainly never sees it. Here's what an IP really reveals.
Does Canvas track your IP address?

An IP address is closer to a return address for a neighborhood than a name on a door. It maps to a rough geographic region and an internet provider — not your identity, your exact location, or your screen. Canvas logs it the way every website logs connections, for security and abuse prevention, not to grade you.
In the normal grading and quiz-log views, your IP isn't attached to your answers. That data sits in server and admin logs that the typical instructor never opens. The one scenario where IP matters is account sharing — two logins from far-apart places — which a Canvas admin might investigate. That's unrelated to how you answer a quiz.
Because IP isn't the signal that flags quiz behavior, leaving the quiz page is, a VPN changes nothing about your quiz log. It solves a problem you don't have. Staying on the page — what CheatGPT does — is the part that actually matters.
